Oatmeal Creme Pie Loaf

Bar Ingredients

  • 1 flax egg
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 coconut butter (melted)
  • 3-4 tbsp non-dairy milk
  • 1 cup oat flour
  • 1 cup Sunflower Seed Flour
  • 1/3 cup coconut sugar
  • 2 tbsp arrowroot
  • 1 tsp baking soda
  • a pinch of salt

Frosting Ingredients

  • 1/4 cup vegan butter
  • 2-3 cups powdered sugar
  • 1 tsp ginger powder
  • 1 tsp vanilla extract
  • 2 tbsp non-dairy milk


  1. Preheat the oven to 375 degrees fahrenheit.  Mix all the ingredients together until smooth, pour into a parchment lined loaf pan and smooth ou the top. 
  2. Bake for around 20 minutes until golden and a toothpick can be removed cleanly.  Let cool while you make the frosting
  3. For the frosting, add everything to a bowl and use a hand mixer to whip until smooth and fluffy.  Top the cooled bars with the frosting and add sprinkles (or Cranberry Seeds) if you'd like!
