Pumpkin Seed Everything Crackers

Looking for the perfect winter snack? Look no further!

Ingredients

  • 1 1/2 cups Pumpkin Seed Flour
  • 2 tbsp nutritional yeast
  • 2 tbsp tapioca or arrowroot powder
  • salt and pepper to taste
  • 1/4 cup water
  • 2 tbsp olive oil
  • Everything seasoning (add Cranberry Seeds!)

Directions

  1. Preheat the oven to 375 degrees fahrenheit and line a sheet tray with parchment paper.
  2. Mix together all the ingredients until the dough holds when pressed together.  Place on the parchment paper then put another sheet of parchment on top of the dough.  Roll until smooth, then sprinkle over the season and gently press it in to the crackers.
  3. Slice the crackers and separate them from one another.
  4. Bake for 10 minutes, then flip them all over and bake for another 5 or so minutes until golden.  Let them cool and crisp completely.

Ingredients

  • 1/2 a squash
  • 1/2 an onion
  • 1/2 head of cauliflower
  • 2 cloves of garlic
  • 1 inch of fresh turmeric
  • 2 cups of veggie broth
  • 1/2 cup full fat coconut milk
  • salt and pepper to taste
  • A big spoonful each of thyme, rosemary, and oregano

Directions

  1. Roughly chop the pumpkin and veggies and add these along with the garlic and turmeric to a steamer and steam until the pumpkin is soft.
  2. Add to a blender with the remaining ingredients and blend until smooth. Pour into a large pot and simmer for 15-20 minutes to cook the herbs and all the flavors together.
  3. Serve with the crackers and fresh cilantro!
