Pumpkin Spice Latte Chia Pudding
3/4 cup strong coffee
3/4 cup full fat coconut milk
1/2 cup pumpkin puree
3 Tbsp maple syrup or honey
1 tsp vanilla extract
3/4 cup pumpkin pie spice
1/2 cup Black Chia Seeds
1 Tbsp pumpkin seeds (optional - for garnish)
1. Blend together coffee, coconut milk, pumpkin, maple, vanilla, and pumpkin pie spice.
2. Stir in chia seeds
3. Transfer mixture to an airtight conatiner and let set in the refridgerator overnight, or until the chia seeds have gelled.
4. Top with pumpkin seeds before serving, if desired.
