5 Seed 5 Spice Sweet Potato Bread

Ingredients: 

1 roasted and blended Sweet Potato
1 1/2 Cups Gluten Free Flour
2 Tbsp Flax Seeds
2 Tbsp Pumpkin Seeds
2 Tbsp Sunflower Seeds
2 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Cinnamon
1 tsp Sea Salt
1/4 tsp Nutmeg
1/4 tsp Cloves
1/4 tsp Ginger
1/4 tsp ground Cardamom
1/3 Cup 5 Seed Butter
1/3 Cup Oil
2-4 Tbsp Coconut Sugar
1 Banana
1/3 Cup Apple Sauce
1/2 tsp Apple Cider Vinegar
1 tsp Vanilla

Directions: 

1. Make two flax eggs by mixing flax seeds with 6Tbsp of water and set in the fridge for 15 minutes.
2. Preheat the oven to 350.
3. Combine all dry ingredients.
4. In a micowaveable bowl, heat coconut oil, banana, and coconut sugar.
5.  Add apple sauce, apple cider vinegar, vanilla and mix.
6. Combine wet and dry ingredients until it becomes a batter.
7. Spread batter into a greased bread pan (you may have enough for a second smaller loaf)
8. Bake for 22-27 minutes.
9.  Allow to cool for at least 10 minutes.
